Immerse yourself in this seafood feast, you'll not only master the recipe but also appreciate the cultural significance of the Fish Head Dish in Singapore cuisine and understand the role of spices.
Course Objective
Participants will gain hands-on experience in preparing a flavourful Fish Head Curry, a perfectly cooked Basmati Steamed Rice and a ginger infused Tea Halia.

Learning Outcomes
Through this hands-on experience, participants will achieve the following objectives:
Prepare Fish Head Curry: Participants will gain hands-on experience in properly cleaning and preparing the fish head, including removing scales, fins and gills. Spices used in Fish Head Curry, such as turmeric, chilli, coriander and cumin. They will understand how each spice contributes to flavour, colour and aroma. They will also understand the techniques involved in handling seafood.
Prepare Basmati Steamed Rice: Participants will not only have perfectly cooked Basmati steamed rice to enjoy but also a deeper understanding of culinary techniques, ingredient quality, and the importance of mastering this fundamental aspect of cooking.
Prepare Tea Halia: Participants will understand the importance of straining the ginger infusion tea to remove any ginger or tea leaves. They will learn how to present Teh Halia in a visually appealing manner.
Attire
- Wear Covered Shoes / Sneakers with socks
- Wear Long / Full Pants
- Have Clean, Short, Trimmed, Natural Nails (No nailpolish, gelish or artificial nails)
- Tie up Medium / Long Hair neatly
Note : Trainees may be sent back to change their attire if they fail to meet the above requirements
