This course equips participants with the knowledge and skills to craft specialty coffees and non-standard beverages with precision and creativity. Learn about the origins and characteristics of coffee beans, explore various brewing techniques, and master the art of grinding, steaming, and blending ingredients to create customized beverages. Participants will also develop sales techniques, ensure compliance with legislative requirements, and maintain equipment for an exceptional coffee brewing experience. Course Objective
The objective of this course is to equip learners with the foundational skills and knowledge needed to prepare a wide range of non-alcoholic beverages. Participants will learn to use standard tools and techniques, understand the characteristics of key ingredients, and master various preparation methods such as brewing, steeping, and blending. The course also emphasizes the importance of temperature control, proper drinkware selection, and workstation readiness, ensuring learners can deliver high-quality beverages in a professional food service environment.

- Explain origins and characteristics of non-standard beverages and ingredients from different regions
- Explain origins and characteristics of coffee beans from different regions
- Describe coffee beans and its processing methods
- Apply sales techniques to recommend and sell customised non-standard beverages and coffee products to customers
- Comply with legislative requirements when preparing non-standard beverages and specialty coffee
- Set up tools and equipment to brew specialty coffee
- Prepare required and substituted ingredients to make / brew specialty coffee
- Follow recipes to prepare specialty coffees using relevant techniques
- Grind coffee beans to correct consistency and/or fineness
- Prepare non-standard beverages - Percolator Coffee, French Press Coffee and Espresso
- Steam milk to prepare latte and cappuccino
- Assess flavour and consistency of different liquids and ingredient to prepare flavoured lattes and cappuccinos
- Use beverage mixers to prepare flavoured lattes and cappuccinos
- Identify quality characteristics of specialty coffee
- Serve specialty coffees in the correct glassware
- Maintain equipment and reinstate work stations according to procedures
Methods of Learning
- Mini lectures to explain concepts and theories about standard beverages
- Practical activities, including role plays, practical performance and demonstration by trainer will be incorporated to illustrate the complete process
- Mutual sharing and feedback
Attire
- Wear Covered Shoes / Sneakers with socks
- Wear Long / Full Pants
- Have Clean, Short, Trimmed, Natural Nails (No nailpolish, gelish or artificial nails)
- Tie up Medium / Long Hair neatly
Note : Trainees may be sent back to change their attire if they fail to meet the above requirements

Minimum Entry Requirement
Participants should be able to converse, read, and write in English at the Employability Skills Workforce Skills Qualification (ES WSQ) and/ or Workplace Literacy (WPL) Level 4 proficiency level.
